- Ground beef - 300 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cilantro - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chicken broth - 500 milliliters
- Tomato paste - 1 tablespoon
- Lemon juice - 2 tablespoons
- Olive oil - 1 tablespoon
- Zucchini - 1 medium, diced
- Carrot - 1 medium, diced
Steps
- In a mixing bowl, combine the ground beef, half of the chopped onion, minced garlic, cilantro, cumin, coriander, paprika, salt, and black pepper. Mix well and form small meatballs, about 2.5 cm in diameter.
- In a large pot, heat the olive oil over medium heat. Add the remaining onion and sauté until translucent, about 3-4 minutes.
- Add the meatballs to the pot and brown them on all sides for about 5 minutes. Remove the meatballs and set aside.
- In the same pot, add the chicken broth and tomato paste, stirring to combine. Bring to a simmer.
- Add the diced zucchini and carrot to the pot, then return the meatballs to the broth. Cover and let simmer for 20 minutes until the vegetables are tender and the meatballs are cooked through.
- Stir in the lemon juice just before serving. Adjust seasoning if necessary.
