Ingredients

  • Dried fava beans - 100 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 small, diced
  • Celery - 1 stalk, diced
  • Vegetable broth - 500 ml
  • Lemon juice - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Soak the dried fava beans in water overnight. Drain and set aside.
  2. In a pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrot, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
  3. Add the soaked fava beans, vegetable broth, cumin, salt, and black pepper to the pot. Bring to a boil, then reduce the heat and let it simmer for about 30-35 minutes, or until the fava beans are tender.
  4. Once cooked, use an immersion blender to puree the soup until smooth, or leave it chunky according to your preference.
  5. Stir in the lemon juice, adjust seasoning if necessary, and cook for an additional 5 minutes.
  6. Serve hot, garnished with fresh parsley.
