- Dried fava beans - 100 grams
- Olive oil - 2 tablespoons
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Carrot - 1 small, diced
- Celery - 1 stalk, diced
- Vegetable broth - 500 ml
- Lemon juice - 1 tablespoon
- Cumin - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Soak the dried fava beans in water overnight. Drain and set aside.
- In a pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrot, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
- Add the soaked fava beans, vegetable broth, cumin, salt, and black pepper to the pot. Bring to a boil, then reduce the heat and let it simmer for about 30-35 minutes, or until the fava beans are tender.
- Once cooked, use an immersion blender to puree the soup until smooth, or leave it chunky according to your preference.
- Stir in the lemon juice, adjust seasoning if necessary, and cook for an additional 5 minutes.
- Serve hot, garnished with fresh parsley.
