Ingredients

  • Chicken breast - 200 grams, diced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Celery - 1 stalk, diced
  • Carrot - 1 small, diced
  • Tomatoes - 2 medium, chopped
  • Vegetable broth - 500 milliliters
  • Lemon juice - 2 tablespoons
  • Cucumber - 1 small, diced
  • Fresh parsley - 2 tablespoons, chopped
  • Mint leaves - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat olive oil in a pot over medium heat and add the diced onions, cooking until translucent.
  2. Add minced garlic, diced celery, and carrot, sautéing for 3-4 minutes until they start to soften.
  3. Stir in the diced chicken breast and cook until browned on all sides.
  4. Add chopped tomatoes and vegetable broth, bringing the mixture to a boil.
  5. Reduce heat and let the soup simmer for about 15 minutes.
  6. In the last 5 minutes of cooking, add diced cucumber, lemon juice, chopped parsley, and mint leaves.
  7. Season with salt and black pepper to taste, then remove from heat.
  8. Serve hot, garnished with additional parsley and mint if desired.
