Ingredients

  • Chicken breast - 300 grams, diced
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Zucchini - 1 medium, diced
  • Chicken broth - 500 ml
  • Water - 500 ml
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, diced carrot, and diced celery, cooking for another 5 minutes.
  4. Add the diced chicken breast to the pot and cook until it begins to brown, about 5-7 minutes.
  5. Stir in the ground cumin, ground coriander, turmeric powder, salt, and black pepper, mixing well.
  6. Pour in the chicken broth and water, bringing the mixture to a boil.
  7. Once boiling, reduce the heat and let it simmer for 15 minutes.
  8. Add the diced zucchini and continue to simmer for another 5-7 minutes until the zucchini is tender.
  9. Stir in the chopped parsley and lemon juice just before serving.
