- Chicken breast - 300 grams, diced
- Olive oil - 1 tablespoon
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Zucchini - 1 medium, diced
- Chicken broth - 500 ml
- Water - 500 ml
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, diced carrot, and diced celery, cooking for another 5 minutes.
- Add the diced chicken breast to the pot and cook until it begins to brown, about 5-7 minutes.
- Stir in the ground cumin, ground coriander, turmeric powder, salt, and black pepper, mixing well.
- Pour in the chicken broth and water, bringing the mixture to a boil.
- Once boiling, reduce the heat and let it simmer for 15 minutes.
- Add the diced zucchini and continue to simmer for another 5-7 minutes until the zucchini is tender.
- Stir in the chopped parsley and lemon juice just before serving.
