Ingredients

  • Chicken thighs - 200 grams, boneless and skinless
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Green bell pepper - 1 small, diced
  • Tomato - 1 medium, diced
  • Vegetable or chicken broth - 500 ml
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - a handful, chopped for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Add the diced carrot, zucchini, and green bell pepper, stirring occasionally for about 5 minutes.
  4. Add the diced tomato, cumin, cinnamon, salt, and black pepper, cooking for another 2-3 minutes.
  5. Incorporate the chicken thighs into the pot, stirring to coat them with the spices and vegetables.
  6. Pour in the broth and bring to a boil, then reduce to a simmer and cover the pot.
  7. Let the soup simmer for about 15-20 minutes, or until the chicken is cooked through and tender.
  8. Remove the chicken, shred it with two forks, and return it to the pot.
  9. Stir in the lemon juice and adjust seasoning if necessary.
  10. Serve hot, garnished with chopped parsley.
