- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Green bell pepper - 1 small, diced
- Tomato - 1 medium, diced
- Vegetable or chicken broth - 500 ml
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - a handful, chopped for garnish
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the diced carrot, zucchini, and green bell pepper, stirring occasionally for about 5 minutes.
- Add the diced tomato, cumin, cinnamon, salt, and black pepper, cooking for another 2-3 minutes.
- Incorporate the chicken thighs into the pot, stirring to coat them with the spices and vegetables.
- Pour in the broth and bring to a boil, then reduce to a simmer and cover the pot.
- Let the soup simmer for about 15-20 minutes, or until the chicken is cooked through and tender.
- Remove the chicken, shred it with two forks, and return it to the pot.
- Stir in the lemon juice and adjust seasoning if necessary.
- Serve hot, garnished with chopped parsley.
