Ingredients

  • Basmati rice - 50 grams
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Zucchini - 1 medium, diced
  • Vegetable broth - 500 ml
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the diced carrot and celery to the pot and sauté for another 5 minutes, stirring occasionally.
  5. Add the diced zucchini and cumin powder, cooking for another 3 minutes.
  6. Pour in the vegetable broth and bring the mixture to a boil.
  7. Once boiling, add the rinsed basmati rice, reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the vegetables are tender.
  8. Remove from heat, stir in lemon juice, chopped parsley, salt, and black pepper to taste.
  9. Serve hot, garnished with additional parsley if desired.
