Ingredients
- Basmati rice - 50 grams
- Olive oil - 1 tablespoon
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Zucchini - 1 medium, diced
- Vegetable broth - 500 ml
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear, then set aside.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced carrot and celery to the pot and sauté for another 5 minutes, stirring occasionally.
- Add the diced zucchini and cumin powder, cooking for another 3 minutes.
- Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, add the rinsed basmati rice, reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the vegetables are tender.
- Remove from heat, stir in lemon juice, chopped parsley, salt, and black pepper to taste.
- Serve hot, garnished with additional parsley if desired.
