Ingredients

  • Beef (chuck or stew meat) - 250 grams, cubed
  • Okra - 200 grams, trimmed and cut into 1-inch pieces
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomatoes - 2 medium, diced
  • Olive oil - 2 tablespoons
  • Beef broth - 500 ml
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon, or to taste
  • Black pepper - 1/2 teaspoon
  • Cilantro - 2 tablespoons, chopped (for garnish)
  • Lemon - 1, juiced

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic to the pot and sauté for an additional minute until fragrant.
  3. Add the cubed beef to the pot, season with salt, black pepper, cumin, and coriander. Brown the beef on all sides, about 5-7 minutes.
  4. Stir in the diced tomatoes and cook for another 3-4 minutes until the tomatoes begin to soften.
  5. Pour in the beef broth, bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 30 minutes until the beef is tender.
  6. Add the okra to the pot and simmer for an additional 10-15 minutes until the okra is cooked but still firm.
  7. Adjust the seasoning if necessary and stir in the lemon juice just before serving.
  8. Serve hot, garnished with fresh cilantro.
