Ingredients

  • Red lentils - 100 grams
  • Onion - 1 medium, finely chopped
  • Carrot - 1 medium, diced
  • Celery stalk - 1, diced
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Vegetable broth - 750 milliliters
  • Salt - 1 teaspoon, or to taste
  • Black pepper - 1/2 teaspoon, or to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - a handful, chopped for garnish

Steps

  1. Heat the olive oil in a pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the diced carrot and celery to the pot, cooking for another 3-4 minutes until slightly softened.
  3. Stir in the minced garlic, cumin powder, and coriander powder, and cook for an additional minute until fragrant.
  4. Add the red lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and simmer for about 20 minutes, or until the lentils are tender.
  5. Season the soup with salt and black pepper to taste. Stir in the lemon juice just before serving.
  6. Ladle the soup into bowls and garnish with fresh parsley.
