- Red lentils - 100 grams
- Onion - 1 medium, finely chopped
- Carrot - 1 medium, diced
- Celery stalk - 1, diced
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Olive oil - 2 tablespoons
- Vegetable broth - 750 milliliters
- Salt - 1 teaspoon, or to taste
- Black pepper - 1/2 teaspoon, or to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - a handful, chopped for garnish
Steps
- Heat the olive oil in a pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the diced carrot and celery to the pot, cooking for another 3-4 minutes until slightly softened.
- Stir in the minced garlic, cumin powder, and coriander powder, and cook for an additional minute until fragrant.
- Add the red lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and simmer for about 20 minutes, or until the lentils are tender.
- Season the soup with salt and black pepper to taste. Stir in the lemon juice just before serving.
- Ladle the soup into bowls and garnish with fresh parsley.
