- Pita bread - 2 pieces
- Greek yogurt - 200 grams
- Olive oil - 1 tablespoon
- Lemon juice - 1 tablespoon
Steps
- In a skillet, heat olive oil over medium heat, then sauté the chopped onion until translucent.
- Add minced garlic and continue to sauté for another minute until fragrant.
- In a mixing bowl, combine the sautéed onion and garlic with ground lamb, toasted pine nuts, parsley, cinnamon, allspice, salt, and black pepper. Mix well.
- Shape the meat mixture into small dumplings (about 2-3 cm in diameter).
- Preheat the grill or barbecue to medium-high heat.
- Thread the dumplings onto skewers, leaving some space between each one.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the meat is cooked through and slightly charred.
- Meanwhile, in a separate bowl, mix Greek yogurt with lemon juice and a pinch of salt to create a dipping sauce.
- Warm the pita bread on the grill for 1-2 minutes until soft and pliable.
- Serve the grilled Shish Barak with the yogurt sauce and warm pita bread.
