  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Eggs - 4 large
  • Fresh parsley - a handful, chopped (for garnish)
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and diced bell pepper, cooking for an additional 3-4 minutes until softened.
  4. Add the crushed tomatoes and tomato paste, stirring to combine.
