  • Tomato paste - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Eggs - 4 large
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Heat olive oil in a large skillet over medium heat. Add the diced red bell pepper and chopped onion, and sauté until softened, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the diced tomatoes, tomato paste, cumin, paprika, salt, and black pepper. Cook for 10-15 minutes, stirring occasionally, until the mixture thickens and the flavors meld.
  4. Using a spoon, make four small wells in the tomato sauce. Crack an egg into each well, cover the skillet, and cook for about 5-7 minutes, or until the egg whites are set but the yolks remain runny.
  5. Remove from heat and sprinkle with chopped parsley and crumbled feta cheese, if desired. Serve hot with a side of low-carb bread or enjoy as is.
