- Paprika - 1 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Canned diced tomatoes - 400 grams
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Eggs - 4 large
- Feta cheese - 50 grams, crumbled
Steps
- In a medium skillet, heat the olive oil over medium heat. Add the chopped onion and red bell pepper, cooking until softened, about 5-7 minutes.
- Stir in the minced garlic, ground cumin, paprika, and cayenne pepper. Cook for an additional 1-2 minutes until fragrant.
- Add the canned diced tomatoes along with their juices. Season with salt and black pepper. Allow the mixture to simmer for about 10-15 minutes, stirring occasionally, until slightly thickened.
- Use a spoon to make four wells in the tomato mixture. Carefully crack an egg into each well.
- Cover the skillet and cook for about 5-7 minutes, or until the egg whites are set but the yolks remain runny.
- Remove from heat, sprinkle with chopped parsley and crumbled feta cheese before serving. Enjoy with crusty bread.
