Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Red bell pepper - 1, diced
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Canned diced tomatoes - 400 grams
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Eggs - 4 large
  • Feta cheese - 50 grams, crumbled

Steps

  1. In a medium skillet, heat the olive oil over medium heat. Add the chopped onion and red bell pepper, cooking until softened, about 5-7 minutes.
  2. Stir in the minced garlic, ground cumin, paprika, and cayenne pepper. Cook for an additional 1-2 minutes until fragrant.
  3. Add the canned diced tomatoes along with their juices. Season with salt and black pepper. Allow the mixture to simmer for about 10-15 minutes, stirring occasionally, until slightly thickened.
  4. Use a spoon to make four wells in the tomato mixture. Carefully crack an egg into each well.
  5. Cover the skillet and cook for about 5-7 minutes, or until the egg whites are set but the yolks remain runny.
  6. Remove from heat, sprinkle with chopped parsley and crumbled feta cheese before serving. Enjoy with crusty bread.
