Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Red bell pepper - 1, diced
  • Garlic - 3 cloves, minced
  • Tomatoes - 400 grams, chopped (canned or fresh)
  • Tomato paste - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Chickpeas - 240 grams, canned, drained and rinsed
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced onion and red bell pepper, sautéing until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the chopped tomatoes, tomato paste, cumin, paprika, cayenne pepper, salt, and black pepper. Stir to combine.
  5. Bring the mixture to a simmer, then reduce the heat and let it cook for about 10 minutes until the sauce thickens.
  6. Fold in the chickpeas and let them heat through for about 3-5 minutes.
  7. Remove the skillet from heat and stir in the fresh parsley, cilantro, and lemon juice.
  8. Serve hot with warm pita bread or over cooked rice.
