- Red bell pepper - 1, diced
- Garlic - 3 cloves, minced
- Tomatoes - 400 grams, chopped (canned or fresh)
- Tomato paste - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Chickpeas - 240 grams, canned, drained and rinsed
- Fresh parsley - 2 tablespoons, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Heat olive oil in a large skillet over medium heat.
- Add the diced onion and red bell pepper, sautéing until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the chopped tomatoes, tomato paste, cumin, paprika, cayenne pepper, salt, and black pepper. Stir to combine.
- Bring the mixture to a simmer, then reduce the heat and let it cook for about 10 minutes until the sauce thickens.
- Fold in the chickpeas and let them heat through for about 3-5 minutes.
- Remove the skillet from heat and stir in the fresh parsley, cilantro, and lemon juice.
- Serve hot with warm pita bread or over cooked rice.
