Ingredients

  • All-purpose flour - 250 grams
  • Instant yeast - 7 grams
  • Sugar - 5 grams
  • Salt - 5 grams
  • Warm water - 150 ml
  • Olive oil - 30 ml
  • Zucchini - 100 grams, finely diced
  • Red bell pepper - 100 grams, finely diced
  • Onion - 50 grams, finely chopped
  • Tomato - 100 grams, finely chopped
  • Fresh parsley - 20 grams, chopped
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pine nuts - 30 grams, toasted
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. In a mixing bowl, combine the flour, instant yeast, sugar, and salt. Gradually add warm water and olive oil, mixing until a dough forms.
  2. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover with a cloth, and let it rise for 30 minutes.
  3. While the dough is rising, prepare the filling. In a skillet, heat a little olive oil over medium heat and sauté the onion until translucent.
  4. Add the zucchini, red bell pepper, and tomato to the skillet. Cook for about 5 minutes until they soften. Stir in parsley, cumin, cinnamon, salt, and pepper, and cook for another 2 minutes.
  5. Remove from heat and stir in the toasted pine nuts. Let the filling cool slightly.
  6. Preheat the oven to 220°C (428°F).
  7. Once the dough has risen, divide it into two equal balls. Roll each ball into a 20 cm (8-inch) round on a floured surface.
  8. Place the rolled dough onto a baking sheet lined with parchment paper. Spoon the vegetable filling onto the center of each round, leaving a border around the edges.
  9. If using, sprinkle crumbled feta cheese on top of the filling.
  10. Bake in the preheated oven for 15-20 minutes or until the edges are golden brown.
  11. Remove from the oven and allow to cool slightly before slicing and serving.
