Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 5 grams
  • Sugar - 5 grams
  • Salt - 5 grams
  • Olive oil - 30 ml
  • Ground beef - 200 grams
  • Onion, finely chopped - 1 medium (about 100 grams)
  • Tomato paste - 30 grams
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pine nuts (optional) - 20 grams
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and add the olive oil and the yeast mixture.
  3. Mix until a dough forms, then knead it on a floured surface for about 8-10 minutes until smooth. Place in a greased bowl, cover, and let rise for 30 minutes.
  4. In a skillet, heat a little olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  5. Add the ground beef to the skillet and cook until browned. Stir in the tomato paste, cinnamon, allspice, salt, and pepper. Cook for another 5 minutes. If using, add the pine nuts and chopped parsley. Remove from heat and let cool.
  6. Preheat your oven to 200°C (390°F).
  7. Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a circle about 10 cm in diameter.
  8. Place a spoonful of the meat filling in the center of each circle. Fold the edges up and pinch to seal, forming a small pie.
  9. Place the sfiha on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until golden brown.
