Ingredients
- All-purpose flour - 200 grams
- Warm water - 100 ml
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Instant yeast - 1 teaspoon
- White fish fillet (such as cod) - 150 grams, finely chopped
- Red bell pepper - 1 small, finely diced
- Red onion - 1 small, finely diced
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Sumac - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Garlic - 1 clove, minced
Steps
- In a mixing bowl, combine the all-purpose flour, salt, and instant yeast. Gradually add warm water and olive oil, mixing until a soft dough forms.
- Knead the dough on a lightly floured surface for about 5 minutes until smooth. Place it in a greased bowl, cover with a cloth, and let it rise for 30 minutes in a warm place.
- While the dough is rising, prepare the filling by mixing the chopped fish, red bell pepper, red onion, parsley, lemon juice, sumac, black pepper, cumin, and minced garlic in a bowl. Set aside.
- Preheat your oven to 200°C (392°F). Once the dough has risen, divide it into two equal portions.
- Roll out each portion into a thin circle (about 20 cm in diameter) on a floured surface.
- Place half of the fish mixture in the center of each dough circle, leaving a small border around the edges. Fold the edges over the filling to create a small pocket.
- Transfer the sfiha to a baking sheet lined with parchment paper and brush the tops with a little olive oil.
- Bake in the preheated oven for 15-20 minutes, or until the dough is golden brown and the fish is cooked through.
- Remove from the oven and let cool for a few minutes before serving.
