Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 100 ml
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Instant yeast - 1 teaspoon
  • White fish fillet (such as cod) - 150 grams, finely chopped
  • Red bell pepper - 1 small, finely diced
  • Red onion - 1 small, finely diced
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Sumac - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Garlic - 1 clove, minced

Steps

  1. In a mixing bowl, combine the all-purpose flour, salt, and instant yeast. Gradually add warm water and olive oil, mixing until a soft dough forms.
  2. Knead the dough on a lightly floured surface for about 5 minutes until smooth. Place it in a greased bowl, cover with a cloth, and let it rise for 30 minutes in a warm place.
  3. While the dough is rising, prepare the filling by mixing the chopped fish, red bell pepper, red onion, parsley, lemon juice, sumac, black pepper, cumin, and minced garlic in a bowl. Set aside.
  4. Preheat your oven to 200°C (392°F). Once the dough has risen, divide it into two equal portions.
  5. Roll out each portion into a thin circle (about 20 cm in diameter) on a floured surface.
  6. Place half of the fish mixture in the center of each dough circle, leaving a small border around the edges. Fold the edges over the filling to create a small pocket.
  7. Transfer the sfiha to a baking sheet lined with parchment paper and brush the tops with a little olive oil.
  8. Bake in the preheated oven for 15-20 minutes, or until the dough is golden brown and the fish is cooked through.
  9. Remove from the oven and let cool for a few minutes before serving.
