Ingredients
- All-purpose flour - 200 grams
- Active dry yeast - 5 grams
- Warm water - 120 milliliters
- Olive oil - 20 milliliters
- Salt - 5 grams
- Ground beef - 250 grams
- Onion, finely chopped - 1 small (about 100 grams)
- Tomato paste - 30 grams
- Ground cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Pine nuts - 30 grams
- Fresh parsley, chopped - 2 tablespoons
Steps
- In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth. Place in a greased bowl, cover with a cloth, and let rise for 1 hour or until doubled in size.
- While the dough is rising, prepare the filling. In a skillet, cook the chopped onion over medium heat until translucent, about 5 minutes.
- Add the ground beef to the skillet and cook until browned, about 7-10 minutes. Drain excess fat if necessary.
- Stir in the tomato paste, cinnamon, allspice, salt, black pepper, and pine nuts. Cook for an additional 5 minutes, then remove from heat and stir in chopped parsley. Let cool slightly.
- Preheat your oven to 220°C (428°F).
- Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a circle about 10 cm in diameter.
- Place a generous tablespoon of the beef filling in the center of each circle. Fold the edges over to create a border, leaving the center exposed.
- Place the sfiha on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until the edges are golden brown.
- Remove from the oven, let cool slightly, and serve warm.
