Ingredients

  • All-purpose flour - 200 grams
  • Active dry yeast - 5 grams
  • Warm water - 120 milliliters
  • Olive oil - 20 milliliters
  • Salt - 5 grams
  • Ground beef - 250 grams
  • Onion, finely chopped - 1 small (about 100 grams)
  • Tomato paste - 30 grams
  • Ground cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pine nuts - 30 grams
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth. Place in a greased bowl, cover with a cloth, and let rise for 1 hour or until doubled in size.
  4. While the dough is rising, prepare the filling. In a skillet, cook the chopped onion over medium heat until translucent, about 5 minutes.
  5. Add the ground beef to the skillet and cook until browned, about 7-10 minutes. Drain excess fat if necessary.
  6. Stir in the tomato paste, cinnamon, allspice, salt, black pepper, and pine nuts. Cook for an additional 5 minutes, then remove from heat and stir in chopped parsley. Let cool slightly.
  7. Preheat your oven to 220°C (428°F).
  8. Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a circle about 10 cm in diameter.
  9. Place a generous tablespoon of the beef filling in the center of each circle. Fold the edges over to create a border, leaving the center exposed.
  10. Place the sfiha on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until the edges are golden brown.
  11. Remove from the oven, let cool slightly, and serve warm.
