Ingredients
- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 7 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Mixed bell peppers (diced) - 100 grams
- Onion (finely chopped) - 50 grams
- Tomato (diced) - 50 grams
- Fresh parsley (chopped) - 30 grams
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
Steps
- In a small bowl, mix warm water and yeast. Let it sit for 5-10 minutes until frothy.
- In a large bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Knead the dough until smooth and elastic, about 10 minutes. Cover and let it rise in a warm place for 30 minutes.
- Meanwhile, in a skillet, heat a tablespoon of olive oil over medium heat. Add onions and sauté until translucent.
- Add diced bell peppers and tomato to the skillet, cooking for another 5 minutes. Stir in parsley, cumin, paprika, black pepper, and lemon juice, and cook for an additional 2 minutes. Remove from heat and let cool.
- Preheat your oven to 200°C (400°F).
- Once the dough has risen, divide it into 6 equal pieces. Roll each piece into a small circle (about 10 cm in diameter).
- Place a spoonful of the vegetable filling in the center of each circle. Fold the edges up and pinch to seal.
- Place the sfiha on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until golden brown.
