Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 7 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Mixed bell peppers (diced) - 100 grams
  • Onion (finely chopped) - 50 grams
  • Tomato (diced) - 50 grams
  • Fresh parsley (chopped) - 30 grams
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. In a small bowl, mix warm water and yeast. Let it sit for 5-10 minutes until frothy.
  2. In a large bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Knead the dough until smooth and elastic, about 10 minutes. Cover and let it rise in a warm place for 30 minutes.
  4. Meanwhile, in a skillet, heat a tablespoon of olive oil over medium heat. Add onions and sauté until translucent.
  5. Add diced bell peppers and tomato to the skillet, cooking for another 5 minutes. Stir in parsley, cumin, paprika, black pepper, and lemon juice, and cook for an additional 2 minutes. Remove from heat and let cool.
  6. Preheat your oven to 200°C (400°F).
  7. Once the dough has risen, divide it into 6 equal pieces. Roll each piece into a small circle (about 10 cm in diameter).
  8. Place a spoonful of the vegetable filling in the center of each circle. Fold the edges up and pinch to seal.
  9. Place the sfiha on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until golden brown.
  10. Serve warm and enjoy your delicious vegan sfiha!
