Ingredients

  • Bulgar wheat - 100 grams
  • Water - 200 ml
  • Fresh parsley - 50 grams, finely chopped
  • Fresh mint - 25 grams, finely chopped
  • Tomatoes - 100 grams, diced
  • Cucumber - 100 grams, diced
  • Red onion - 50 grams, finely chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Cooked shrimp - 100 grams, peeled and deveined
  • Cooked calamari - 100 grams, sliced
  • Cooked mussels - 100 grams, shelled

Steps

  1. Rinse the bulgar wheat under cold water and then soak it in 200 ml of water for about 20 minutes until it absorbs the water and becomes tender.
  2. In a large bowl, combine the finely chopped parsley, mint, diced tomatoes, cucumber, and red onion.
  3. Once the bulgar wheat is ready, drain any excess water and add it to the bowl with the vegetables.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create a dressing.
  5. Pour the dressing over the bulgar and vegetable mixture, and stir well to combine all ingredients evenly.
  6. Gently fold in the cooked shrimp, calamari, and mussels until they are evenly distributed throughout the tabbouleh.
  7. Taste and adjust seasoning if necessary, then let the dish sit for 10 minutes to allow the flavors to meld together before serving.
