Ingredients

  • Basmati rice - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Carrot - 1 medium, diced
  • Tomato - 1 medium, diced
  • Fish stock - 300 milliliters
  • Shrimp - 100 grams, peeled and deveined
  • Calamari - 100 grams, sliced
  • White fish fillet - 100 grams, cut into cubes
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - a handful, chopped
  • Lemon - 1, juiced

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes before draining.
  2. In a large skillet or pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  3. Add the diced red bell pepper and carrot, cooking for an additional 3-4 minutes until they soften.
  4. Stir in the diced tomato and cook for another 2 minutes.
  5. Add the drained basmati rice, stirring to coat it with the oil and vegetables. Cook for 2 minutes.
  6. Pour in the fish stock, and season with salt and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
  7. In the last 5 minutes of cooking, gently fold in the shrimp, calamari, and white fish. Cover again and allow the seafood to steam until cooked through.
  8. Once done, remove from heat and let it sit covered for another 5 minutes.
  9. Fluff the pilaf with a fork, adding chopped cilantro and a squeeze of lemon juice before serving.
