Ingredients
- Eggplant - 1 large
- Zucchini - 1 medium
- Olive oil - 3 tablespoons
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1, chopped
- Tomatoes - 2 medium, diced
- Shrimp - 150 grams, peeled and deveined
- Fish fillet (white fish) - 150 grams, cut into small pieces
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Béchamel sauce (prepared) - 1 cup
- Grated cheese (optional) - 50 grams
Steps
- Preheat the oven to 180°C (350°F).
- Slice the eggplant and zucchini into 1 cm thick slices. Sprinkle with salt and let sit for 15 minutes to draw out moisture.
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the onion, garlic, and red bell pepper, and sauté until softened, about 5 minutes.
- Add the diced tomatoes, shrimp, fish pieces, paprika, salt, and black pepper to the skillet. Cook for an additional 5-7 minutes until the seafood is cooked through. Stir in the fresh parsley and remove from heat.
- Rinse the eggplant and zucchini slices under cold water, then pat dry with paper towels.
- In a large skillet, heat the remaining tablespoon of olive oil over medium-high heat. Fry the eggplant and zucchini slices until golden brown on both sides, about 3-4 minutes per side. Remove and set aside.
- In a baking dish, layer half of the fried eggplant and zucchini on the bottom. Spread the seafood mixture evenly over the vegetables, then top with the remaining eggplant and zucchini.
- Pour the béchamel sauce over the top layer and sprinkle with grated cheese if using.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbling.
- Allow to cool slightly before serving.
