Ingredients

  • Eggplant - 1 large
  • Zucchini - 1 medium
  • Olive oil - 3 tablespoons
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, chopped
  • Tomatoes - 2 medium, diced
  • Shrimp - 150 grams, peeled and deveined
  • Fish fillet (white fish) - 150 grams, cut into small pieces
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Béchamel sauce (prepared) - 1 cup
  • Grated cheese (optional) - 50 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Slice the eggplant and zucchini into 1 cm thick slices. Sprinkle with salt and let sit for 15 minutes to draw out moisture.
  3. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the onion, garlic, and red bell pepper, and sauté until softened, about 5 minutes.
  4. Add the diced tomatoes, shrimp, fish pieces, paprika, salt, and black pepper to the skillet. Cook for an additional 5-7 minutes until the seafood is cooked through. Stir in the fresh parsley and remove from heat.
  5. Rinse the eggplant and zucchini slices under cold water, then pat dry with paper towels.
  6. In a large skillet, heat the remaining tablespoon of olive oil over medium-high heat. Fry the eggplant and zucchini slices until golden brown on both sides, about 3-4 minutes per side. Remove and set aside.
  7. In a baking dish, layer half of the fried eggplant and zucchini on the bottom. Spread the seafood mixture evenly over the vegetables, then top with the remaining eggplant and zucchini.
  8. Pour the béchamel sauce over the top layer and sprinkle with grated cheese if using.
  9. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbling.
  10. Allow to cool slightly before serving.
