  • Firm tofu - 200 grams, cubed
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon wedges - for serving

Steps

  1. In a large bowl, combine the olive oil, lemon juice, garlic powder, cumin, paprika, salt, and black pepper to make the marinade.
  2. Add the zucchini, bell pepper, cherry tomatoes, red onion, and tofu cubes to the marinade, tossing gently to coat everything evenly.
  3. Cover the bowl and let the mixture marinate in the refrigerator for at least 15 minutes.
  4. Preheat your grill or grill pan over medium heat.
  5. Thread the marinated vegetables and tofu onto skewers, alternating between different ingredients to create a colorful presentation.
  6. Place the kebabs on the grill and cook for about 10-12 minutes, turning occasionally until the vegetables are tender and slightly charred.
