- Paprika - 1 teaspoon

- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped

Steps
- In a large bowl, combine the olive oil, lemon juice, garlic powder, cumin, paprika, salt, and black pepper to make the marinade.
- Add the zucchini, bell pepper, cherry tomatoes, red onion, and tofu cubes to the marinade, tossing gently to coat everything evenly.
