Ingredients

  • Basmati rice - 150 grams
  • Olive oil - 2 tablespoons
  • Garlic cloves - 4, minced
  • Tahini - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Vegetable broth - 500 ml
  • Mixed seafood (shrimp, calamari, and fish) - 300 grams
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the soaked rice to the saucepan, stirring to coat it in the garlic oil. Pour in the vegetable broth, bring to a boil, then cover and simmer on low heat for 15 minutes or until the rice is cooked and liquid is absorbed.
  4. While the rice is cooking, prepare the seafood. In a skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the mixed seafood, sprinkle with paprika, salt, and black pepper, and cook for about 5-7 minutes until the seafood is cooked through and opaque.
  5. In a small bowl, mix the tahini, lemon juice, and a little water to create a smooth sauce. Adjust the consistency with more water if necessary.
  6. Once the rice is ready, fluff it with a fork. Serve the rice on a plate, topped with the sautéed seafood and drizzled with the tahini sauce.
  7. Garnish with chopped parsley before serving.
