Ingredients

  • Basmati rice - 150 grams
  • Chickpeas (cooked) - 200 grams
  • Onion - 1 large, finely chopped
  • Garlic - 3 cloves, minced
  • Tomatoes - 2 medium, diced
  • Cilantro - 1/4 cup, chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 3 tablespoons
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable broth - 400 ml

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
  4. Stir in the diced tomatoes, cumin, coriander, turmeric, paprika, salt, and black pepper. Cook for 5 minutes until the tomatoes soften.
  5. Add the cooked chickpeas and stir well to combine with the spice mixture.
  6. Drain the soaked rice and add it to the pot, mixing thoroughly to coat the rice with the spices.
  7. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  8. Once cooked, remove from heat and let sit, covered, for an additional 5 minutes.
  9. Fluff the rice with a fork, then drizzle with the remaining olive oil and lemon juice. Stir in the chopped cilantro before serving.
