- Basmati rice - 150 grams
- Chickpeas (cooked) - 200 grams
- Onion - 1 large, finely chopped
- Garlic - 3 cloves, minced
- Tomatoes - 2 medium, diced
- Cilantro - 1/4 cup, chopped
- Lemon juice - 2 tablespoons
- Olive oil - 3 tablespoons
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Vegetable broth - 400 ml
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
- Stir in the diced tomatoes, cumin, coriander, turmeric, paprika, salt, and black pepper. Cook for 5 minutes until the tomatoes soften.
- Add the cooked chickpeas and stir well to combine with the spice mixture.
- Drain the soaked rice and add it to the pot, mixing thoroughly to coat the rice with the spices.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
- Once cooked, remove from heat and let sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, then drizzle with the remaining olive oil and lemon juice. Stir in the chopped cilantro before serving.
