- Basmati rice - 150 grams
- White fish fillets (e.g., cod or haddock) - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Water - 350 milliliters
- Fresh parsley - 2 tablespoons, chopped
- Lemon wedges - for serving
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pan, heat the olive oil over medium heat and sauté the chopped onion until translucent.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the ground cumin, coriander, turmeric, salt, and black pepper, and cook for another minute to toast the spices.
- Add the soaked and drained rice to the pan, stirring to combine with the spices and onion mixture.
- Pour in the water, bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and water is absorbed.
- While the rice is cooking, season the fish fillets with salt and pepper.
- In another skillet, heat a little olive oil over medium heat and cook the fish for about 3-4 minutes on each side, or until cooked through and flaky.
- Fluff the rice with a fork and serve it on plates topped with the cooked fish.
- Garnish with fresh parsley and serve with lemon wedges on the side.
