Ingredients

  • Basmati rice - 150 grams
  • White fish fillets (e.g., cod or haddock) - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Water - 350 milliliters
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon wedges - for serving

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pan, heat the olive oil over medium heat and sauté the chopped onion until translucent.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the ground cumin, coriander, turmeric, salt, and black pepper, and cook for another minute to toast the spices.
  5. Add the soaked and drained rice to the pan, stirring to combine with the spices and onion mixture.
  6. Pour in the water, bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and water is absorbed.
  7. While the rice is cooking, season the fish fillets with salt and pepper.
  8. In another skillet, heat a little olive oil over medium heat and cook the fish for about 3-4 minutes on each side, or until cooked through and flaky.
  9. Fluff the rice with a fork and serve it on plates topped with the cooked fish.
  10. Garnish with fresh parsley and serve with lemon wedges on the side.
