Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 100 ml
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Spinach - 150 grams (fresh or frozen)
  • Onion - 1 small (finely chopped)
  • Garlic - 1 clove (minced)
  • Lemon juice - 1 tablespoon
  • Black pepper - 1/4 teaspoon
  • Sumac - 1/2 teaspoon
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. In a mixing bowl, combine the all-purpose flour, warm water, olive oil, and salt. Knead the mixture for about 5-7 minutes until a smooth dough forms. Cover with a clean cloth and let it rest for 30 minutes.
  2. In a pan, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Add the spinach to the pan and cook until wilted (if using fresh) or heated through (if using frozen). Remove from heat and stir in the lemon juice, black pepper, and sumac. Allow the filling to cool slightly.
  4. Preheat your oven to 180°C (350°F).
  5. Divide the rested dough into small balls (about the size of a golf ball). Roll each ball into a thin circle on a floured surface.
  6. Place a spoonful of the spinach filling in the center of each circle. Fold the dough over to form a half-moon shape and pinch the edges to seal tightly. You can also use a fork to crimp the edges for a decorative touch.
  7. Place the sambousek on a baking sheet lined with parchment paper. Brush the tops with a little olive oil and sprinkle with sesame seeds.
  8. Bake in the preheated oven for 20-25 minutes or until golden brown. Serve warm.
