- All-purpose flour - 250 grams
- Salt - 1 teaspoon
- Olive oil - 2 tablespoons
- Warm water - 100 ml
- Ground beef - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Pine nuts - 2 tablespoons, toasted
- Fresh parsley - 2 tablespoons, chopped
- Egg - 1, beaten (for egg wash)
Steps
- In a mixing bowl, combine the flour and 1 teaspoon of salt. Add the olive oil and mix until crumbly.
- Gradually add warm water until a soft dough forms. Knead for about 5 minutes, then cover and let it rest for 30 minutes.
- In a skillet, heat a bit of olive oil over medium heat. Add the chopped onion and cook until translucent.
- Add the minced garlic and sauté for another minute. Then, add the ground beef, cumin, cinnamon, salt, and black pepper. Cook until the meat is browned and fully cooked.
- Stir in the toasted pine nuts and chopped parsley. Remove from heat and let the filling cool.
- Preheat the oven to 200°C (400°F).
- Roll out the dough on a floured surface until thin. Cut into circles about 10 cm in diameter.
- Place a tablespoon of the meat filling in the center of each circle. Fold the dough over to form a half-moon shape and seal the edges by pressing with a fork.
- Brush the sambousek with the beaten egg for a golden finish.
- Arrange the sambousek on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
