Ingredients

  • All-purpose flour - 250 grams
  • Salt - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Warm water - 100 ml
  • Ground beef - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Pine nuts - 2 tablespoons, toasted
  • Fresh parsley - 2 tablespoons, chopped
  • Egg - 1, beaten (for egg wash)

Steps

  1. In a mixing bowl, combine the flour and 1 teaspoon of salt. Add the olive oil and mix until crumbly.
  2. Gradually add warm water until a soft dough forms. Knead for about 5 minutes, then cover and let it rest for 30 minutes.
  3. In a skillet, heat a bit of olive oil over medium heat. Add the chopped onion and cook until translucent.
  4. Add the minced garlic and sauté for another minute. Then, add the ground beef, cumin, cinnamon, salt, and black pepper. Cook until the meat is browned and fully cooked.
  5. Stir in the toasted pine nuts and chopped parsley. Remove from heat and let the filling cool.
  6. Preheat the oven to 200°C (400°F).
  7. Roll out the dough on a floured surface until thin. Cut into circles about 10 cm in diameter.
  8. Place a tablespoon of the meat filling in the center of each circle. Fold the dough over to form a half-moon shape and seal the edges by pressing with a fork.
  9. Brush the sambousek with the beaten egg for a golden finish.
  10. Arrange the sambousek on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
