Ingredients

  • Almond flour - 200 grams
  • Psyllium husk - 2 tablespoons
  • Egg - 1 large
  • Mozzarella cheese - 100 grams, shredded
  • Feta cheese - 50 grams, crumbled
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Dried oregano - 1/2 teaspoon
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, psyllium husk, salt, and pepper.
  3. In a separate bowl, beat the egg and then mix in olive oil, mozzarella cheese, feta cheese, and oregano until well combined.
  4. Add the dry ingredients to the cheese mixture and knead until a dough forms.
  5. Divide the dough into small balls (about 30 grams each) and flatten them into circles on a clean surface.
  6. Place a tablespoon of the cheese mixture in the center of each circle and fold the dough over to create a half-moon shape, sealing the edges with a fork.
  7. Place the sambousek on the prepared baking sheet and sprinkle with sesame seeds.
  8. Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.
  9. Remove from the oven and let cool slightly before serving.
