Ingredients
- All-purpose flour - 200 grams
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Water - 100 ml
- Fresh spinach - 200 grams, chopped
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Sumac - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- In a bowl, mix the flour, olive oil, and salt. Gradually add water until a dough forms. Knead for 5 minutes until smooth, then cover and let it rest for 30 minutes.
- In a pan over medium heat, sauté the onion and garlic until translucent. Add the chopped spinach and cook until wilted. Stir in sumac, black pepper, parsley, lemon juice, and crumbled feta. Remove from heat and let the filling cool.
- Preheat your oven to 200°C (400°F). Roll out the dough on a floured surface to about 2 mm thickness. Cut into circles using a cookie cutter or a glass.
- Place a tablespoon of the spinach filling in the center of each circle. Fold the dough over to create a half-moon shape and seal the edges by pressing with your fingers or a fork.
- Arrange the sambousek on a baking sheet lined with parchment paper. Brush the tops lightly with olive oil.
- Bake for 20 minutes or until golden brown. Serve warm.
