Ingredients

  • Ground lamb - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon
  • Almond flour - 100 grams
  • Egg - 1 large, beaten (for dough and egg wash)
  • Water - 2 tablespoons (for dough)

Steps

  1. In a skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Stir in the ground lamb, cinnamon, allspice, salt, and black pepper. Cook until the meat is browned, about 8-10 minutes. Remove from heat and mix in the chopped parsley. Let the filling cool.
  4. In a mixing bowl, combine almond flour and a pinch of salt. Create a well in the center and add the beaten egg and water. Mix until a dough forms. If too crumbly, add a little more water.
  5. Preheat your oven to 180°C (350°F).
  6. On a parchment-lined surface, roll out the dough to about 1/4 inch thick. Cut out circles using a small bowl or a cookie cutter, about 10 cm in diameter.
  7. Place a tablespoon of the meat filling in the center of each dough circle. Fold the dough over to form a half-moon shape and crimp the edges to seal.
  8. Place the sambousek on a baking tray lined with parchment paper. Brush the tops with the remaining beaten egg.
  9. Bake in the preheated oven for 20-25 minutes or until golden brown. Serve hot.
