Ingredients

  • all-purpose flour - 200 grams
  • water - 100 milliliters
  • salt - 1 teaspoon
  • olive oil - 1 tablespoon
  • ground beef or lamb - 200 grams
  • onion - 1 medium, finely chopped
  • garlic - 2 cloves, minced
  • cinnamon - 1/2 teaspoon
  • allspice - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • pine nuts - 30 grams, toasted
  • parsley - 2 tablespoons, chopped
  • egg - 1, beaten (for egg wash)
  • vegetable oil - for frying

Steps

  1. In a bowl, combine the flour, salt, olive oil, and water to form a dough. Knead for about 5 minutes until smooth, then cover and let it rest for 30 minutes.
  2. In a skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
  3. Add the ground meat to the skillet and cook until browned, breaking it up with a spoon. Stir in cinnamon, allspice, black pepper, and cook for another 2-3 minutes.
  4. Remove from heat and mix in toasted pine nuts and chopped parsley. Let the filling cool slightly.
  5. Divide the rested dough into small balls (about the size of a golf ball). Roll each ball out into a thin circle on a floured surface.
  6. Place a tablespoon of the meat filling on one half of each circle, then fold the dough over to create a half-moon shape. Press the edges to seal and crimp with a fork.
  7. Heat vegetable oil in a deep pan over medium heat. Fry the sambousek in batches until golden brown, about 3-4 minutes on each side.
  8. Remove from oil and drain on paper towels. Brush with beaten egg for a glossy finish before serving.
