Ingredients
- all-purpose flour - 200 grams
- water - 100 milliliters
- salt - 1 teaspoon
- olive oil - 1 tablespoon
- ground beef or lamb - 200 grams
- onion - 1 medium, finely chopped
- garlic - 2 cloves, minced
- cinnamon - 1/2 teaspoon
- allspice - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- pine nuts - 30 grams, toasted
- parsley - 2 tablespoons, chopped
- egg - 1, beaten (for egg wash)
- vegetable oil - for frying
Steps
- In a bowl, combine the flour, salt, olive oil, and water to form a dough. Knead for about 5 minutes until smooth, then cover and let it rest for 30 minutes.
- In a skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
- Add the ground meat to the skillet and cook until browned, breaking it up with a spoon. Stir in cinnamon, allspice, black pepper, and cook for another 2-3 minutes.
- Remove from heat and mix in toasted pine nuts and chopped parsley. Let the filling cool slightly.
- Divide the rested dough into small balls (about the size of a golf ball). Roll each ball out into a thin circle on a floured surface.
- Place a tablespoon of the meat filling on one half of each circle, then fold the dough over to create a half-moon shape. Press the edges to seal and crimp with a fork.
- Heat vegetable oil in a deep pan over medium heat. Fry the sambousek in batches until golden brown, about 3-4 minutes on each side.
- Remove from oil and drain on paper towels. Brush with beaten egg for a glossy finish before serving.
