Ingredients
- All-purpose flour - 200 grams
- Salt - 1 teaspoon
- Olive oil - 2 tablespoons
- Water - 100 ml (adjust as needed)
- Feta cheese - 100 grams, crumbled
- Mozzarella cheese - 100 grams, grated
- Parsley - 2 tablespoons, finely chopped
- Black pepper - 1/2 teaspoon
- Egg - 1, beaten (for egg wash)
Steps
- In a mixing bowl, combine the flour and salt. Add olive oil and mix until crumbly.
- Gradually add water until a smooth dough forms. Knead for 5 minutes, then cover with a cloth and let it rest for 30 minutes.
- In another bowl, mix together the crumbled feta, grated mozzarella, chopped parsley, and black pepper until well combined.
- Preheat the oven to 200°C (400°F).
- Divide the rested dough into small balls (about the size of a golf ball). Roll out each ball into a thin circle on a floured surface.
- Place a tablespoon of the cheese mixture in the center of each circle. Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork.
- Place the sambousek on a baking sheet lined with parchment paper. Brush the top of each pastry with the beaten egg.
- Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.
