Ingredients

  • All-purpose flour - 200 grams
  • Salt - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Water - 100 ml (adjust as needed)
  • Feta cheese - 100 grams, crumbled
  • Mozzarella cheese - 100 grams, grated
  • Parsley - 2 tablespoons, finely chopped
  • Black pepper - 1/2 teaspoon
  • Egg - 1, beaten (for egg wash)

Steps

  1. In a mixing bowl, combine the flour and salt. Add olive oil and mix until crumbly.
  2. Gradually add water until a smooth dough forms. Knead for 5 minutes, then cover with a cloth and let it rest for 30 minutes.
  3. In another bowl, mix together the crumbled feta, grated mozzarella, chopped parsley, and black pepper until well combined.
  4. Preheat the oven to 200°C (400°F).
  5. Divide the rested dough into small balls (about the size of a golf ball). Roll out each ball into a thin circle on a floured surface.
  6. Place a tablespoon of the cheese mixture in the center of each circle. Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork.
  7. Place the sambousek on a baking sheet lined with parchment paper. Brush the top of each pastry with the beaten egg.
  8. Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.
