- Black pepper - 1/2 teaspoon
- Tahini - 4 tablespoons
- Water - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Pine nuts - 2 tablespoons, toasted
Steps
- Preheat your grill or grill pan over medium heat.
- Slice the eggplant into 1 cm thick rounds and place them in a bowl.
- In a small bowl, whisk together olive oil, lemon juice, minced garlic, cumin, paprika, salt, and black pepper.
- Pour the marinade over the eggplant slices and let them sit for 10 minutes to absorb the flavors.
- Grill the marinated eggplant slices for about 3-4 minutes on each side, until they are tender and have grill marks.
- While the eggplant is grilling, prepare the tahini sauce by mixing tahini, water, and a pinch of salt in a bowl until smooth.
- Once the eggplant is cooked, remove it from the grill and let it cool slightly.
- Drizzle the tahini sauce over the grilled eggplant slices and garnish with chopped parsley and toasted pine nuts.
- Serve warm or at room temperature with extra lemon wedges on the side.
