Ingredients

  • Eggplant - 300 grams
  • Olive oil - 2 tablespoons

  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Tahini - 4 tablespoons
  • Water - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Pine nuts - 2 tablespoons, toasted

Steps

  1. Preheat your grill or grill pan over medium heat.
  2. Slice the eggplant into 1 cm thick rounds and place them in a bowl.
  3. In a small bowl, whisk together olive oil, lemon juice, minced garlic, cumin, paprika, salt, and black pepper.
  4. Pour the marinade over the eggplant slices and let them sit for 10 minutes to absorb the flavors.
  5. Grill the marinated eggplant slices for about 3-4 minutes on each side, until they are tender and have grill marks.
  6. While the eggplant is grilling, prepare the tahini sauce by mixing tahini, water, and a pinch of salt in a bowl until smooth.
  7. Once the eggplant is cooked, remove it from the grill and let it cool slightly.
  8. Drizzle the tahini sauce over the grilled eggplant slices and garnish with chopped parsley and toasted pine nuts.
  9. Serve warm or at room temperature with extra lemon wedges on the side.
