Ingredients

  • White fish fillets (e.g., cod or haddock) - 300 grams
  • Olive oil - 2 tablespoons
  • Fresh lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh parsley - 1/4 cup, chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Cherry tomatoes - 150 grams, halved
  • Red onion - 1 small, thinly sliced
  • Cucumber - 1 small, diced
  • Sea salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon

Steps

  1. In a bowl, mix olive oil, lemon juice, minced garlic, sea salt, black pepper, and paprika to create a marinade.
  2. Add the white fish fillets to the marinade, ensuring they are well-coated. Let them marinate for 15 minutes.
  3. While the fish is marinating, prepare the salad by combining cherry tomatoes, red onion, cucumber, parsley, and cilantro in a large bowl.
  4. Once the fish has marinated, heat a grill pan over medium-high heat. Grill the fish for about 4-5 minutes on each side, or until cooked through and flaky.
  5. Remove the fish from the grill and let it rest for a minute before slicing it into bite-sized pieces.
  6. Serve the grilled fish on a plate, topped with the fresh salad mixture.
