Ingredients

  • Quinoa - 100 grams
  • Fresh parsley - 50 grams, finely chopped
  • Fresh mint - 25 grams, finely chopped
  • Tomato - 1 medium, diced
  • Cucumber - 1 small, diced
  • Red onion - 1/4, finely chopped
  • Lemon juice - 30 ml
  • Olive oil - 15 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the quinoa under cold water, then add it to a pot with 200 ml of water. Bring to a boil, reduce heat, cover, and simmer for 15 minutes or until the water is absorbed.
  2. Once cooked, remove the quinoa from heat and let it sit covered for 5 minutes. Fluff with a fork and allow it to cool to room temperature.
  3. In a large mixing bowl, combine the chopped parsley, mint, diced tomato, cucumber, and red onion.
  4. Add the cooled quinoa to the bowl with the vegetables and herbs.
  5. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  6. Pour the dressing over the salad and toss gently to combine all ingredients.
  7. Serve immediately or chill in the refrigerator for 30 minutes before serving for enhanced flavors.
