Ingredients

  • Mint leaves - 15 grams, chopped
  • Lemon juice - 30 ml (about 2 tablespoons)
  • Olive oil - 30 ml (about 2 tablespoons)
  • Pomegranate seeds - 30 grams
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Wash and prepare all the vegetables: dice the tomato, cucumber, and bell pepper, thinly slice the radishes, and chop the green onions, parsley, and mint.
  2. In a large bowl, combine the diced tomatoes, cucumbers, radishes, bell pepper, green onions, parsley, and mint.
  3. In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper to create the dressing.
  4. Pour the dressing over the salad mix and toss gently to combine, ensuring all the vegetables are well coated.
