Ingredients

  • Sweet potatoes - 400 grams
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pomegranate seeds - 50 grams

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Peel the sweet potatoes and cut them into 2 cm cubes.
  3. Spread the sweet potato cubes on a baking sheet, drizzle with 1 tablespoon of olive oil, and sprinkle with salt and pepper.
  4. Roast in the oven for about 20-25 minutes or until tender and slightly caramelized, stirring halfway through.
  5. While the sweet potatoes are roasting, prepare the dressing by whisking together the remaining olive oil, lemon juice, minced garlic, salt, and pepper in a bowl.
  6. In a large mixing bowl, combine the roasted sweet potatoes, chopped red onion, parsley, mint, and pomegranate seeds.
  7. Pour the dressing over the salad and toss gently to combine.
  8. Serve warm or at room temperature.
