- Sweet potatoes - 400 grams
- Red onion - 1 small, finely chopped
- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic - 1 clove, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Pomegranate seeds - 50 grams
Steps
- Preheat your oven to 200°C (400°F).
- Peel the sweet potatoes and cut them into 2 cm cubes.
- Spread the sweet potato cubes on a baking sheet, drizzle with 1 tablespoon of olive oil, and sprinkle with salt and pepper.
- Roast in the oven for about 20-25 minutes or until tender and slightly caramelized, stirring halfway through.
- While the sweet potatoes are roasting, prepare the dressing by whisking together the remaining olive oil, lemon juice, minced garlic, salt, and pepper in a bowl.
- In a large mixing bowl, combine the roasted sweet potatoes, chopped red onion, parsley, mint, and pomegranate seeds.
- Pour the dressing over the salad and toss gently to combine.
- Serve warm or at room temperature.
