Ingredients

  • Jasmine rice - 100 grams
  • Whole milk - 500 milliliters
  • Sugar - 50 grams
  • Saffron threads - 0.1 grams
  • Cardamom pods - 2, crushed
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Pistachios - 20 grams, chopped (for garnish)
  • Rose water - 1 teaspoon (optional)

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain well.
  2. In a medium saucepan, combine the rinsed rice, whole milk, sugar, saffron threads, crushed cardamom pods, and a pinch of salt.
  3. Bring the mixture to a gentle boil over medium heat, stirring frequently to prevent the rice from sticking to the bottom.
  4. Once it reaches a boil, reduce the heat to low, cover the saucepan, and let it simmer for about 20 minutes or until the rice is soft and the pudding thickens.
  5. Remove the saucepan from heat and stir in the vanilla extract and rose water, if using.
  6. Let the pudding cool slightly, then transfer it to serving bowls or cups.
  7. Garnish with chopped pistachios before serving warm or chilled.
