Ingredients
- Jasmine rice - 1/3 cup (60g)
- Water - 1 cup (240ml)
- Whole milk - 1 cup (240ml)
- Granulated sugar - 3 tablespoons (45g)
- Rose water - 1 tablespoon (15ml)
- Cornstarch - 1 tablespoon (8g)
- Salt - a pinch
- Pistachios, crushed - 2 tablespoons (30g)
- Ground cinnamon - for garnish
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until all the water is absorbed.
- In a separate bowl, whisk together the whole milk, sugar, cornstarch, and a pinch of salt until smooth.
- Once the rice is cooked, add the milk mixture to the rice in the saucepan and stir well. Cook over medium heat, stirring constantly, until the mixture thickens, about 5-7 minutes.
- Remove the saucepan from heat and stir in the rose water.
- Pour the pudding into serving bowls and let it cool to room temperature, then refrigerate for at least 1 hour.
- Before serving, garnish with crushed pistachios and a sprinkle of ground cinnamon.
