Ingredients

  • Jasmine rice - 1/3 cup (60g)
  • Water - 1 cup (240ml)
  • Whole milk - 1 cup (240ml)
  • Granulated sugar - 3 tablespoons (45g)
  • Rose water - 1 tablespoon (15ml)
  • Cornstarch - 1 tablespoon (8g)
  • Salt - a pinch
  • Pistachios, crushed - 2 tablespoons (30g)
  • Ground cinnamon - for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until all the water is absorbed.
  3. In a separate bowl, whisk together the whole milk, sugar, cornstarch, and a pinch of salt until smooth.
  4. Once the rice is cooked, add the milk mixture to the rice in the saucepan and stir well. Cook over medium heat, stirring constantly, until the mixture thickens, about 5-7 minutes.
  5. Remove the saucepan from heat and stir in the rose water.
  6. Pour the pudding into serving bowls and let it cool to room temperature, then refrigerate for at least 1 hour.
  7. Before serving, garnish with crushed pistachios and a sprinkle of ground cinnamon.
