  • Bell pepper (red or yellow) - 1 medium, diced

  • Red onion - 1 small, sliced
  • Cherry tomatoes - 150 grams, halved
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, combine the diced zucchini, bell pepper, sliced carrot, red onion, halved cherry tomatoes, and minced garlic.
  3. Drizzle the olive oil over the vegetables and sprinkle with ground cumin, ground coriander, salt, and black pepper. Toss until all the vegetables are well coated.
  4. Spread the vegetable mixture evenly on a baking sheet lined with parchment paper.
