Ingredients

  • All-purpose flour - 200 grams
  • Water - 120 ml
  • Instant yeast - 5 grams
  • Olive oil - 15 ml
  • Salt - 5 grams
  • Zucchini - 100 grams, sliced
  • Red bell pepper - 100 grams, diced
  • Red onion - 50 grams, sliced
  • Cherry tomatoes - 100 grams, halved
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 10 grams, chopped

Steps

  1. In a mixing bowl, combine flour, instant yeast, salt, and olive oil. Gradually add water and mix until a dough forms.
  2. Knead the dough on a floured surface for about 5 minutes until smooth and elastic. Cover and let it rise in a warm place for 30 minutes.
  3. Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.
  4. In a bowl, toss zucchini, red bell pepper, red onion, cherry tomatoes, minced garlic, dried oregano, and black pepper with olive oil. Spread the vegetables evenly on the prepared baking sheet.
  5. Roast the vegetables in the preheated oven for 15-20 minutes until tender and slightly caramelized.
  6. Once the dough has risen, divide it into two equal portions. Roll each portion into a round flatbread about 1 cm thick.
  7. Transfer the flatbreads onto another baking sheet. Top each flatbread with the roasted vegetables, crumbled feta cheese, and chopped parsley.
  8. Bake in the oven for an additional 10-12 minutes or until the edges are golden brown.
  9. Remove from the oven, allow to cool slightly, and serve warm.
