Ingredients
- All-purpose flour - 200 grams
- Water - 120 ml
- Instant yeast - 5 grams
- Olive oil - 15 ml
- Salt - 5 grams
- Zucchini - 100 grams, sliced
- Red bell pepper - 100 grams, diced
- Red onion - 50 grams, sliced
- Cherry tomatoes - 100 grams, halved
- Garlic - 2 cloves, minced
- Dried oregano - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 10 grams, chopped
Steps
- In a mixing bowl, combine flour, instant yeast, salt, and olive oil. Gradually add water and mix until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth and elastic. Cover and let it rise in a warm place for 30 minutes.
- Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.
- In a bowl, toss zucchini, red bell pepper, red onion, cherry tomatoes, minced garlic, dried oregano, and black pepper with olive oil. Spread the vegetables evenly on the prepared baking sheet.
- Roast the vegetables in the preheated oven for 15-20 minutes until tender and slightly caramelized.
- Once the dough has risen, divide it into two equal portions. Roll each portion into a round flatbread about 1 cm thick.
- Transfer the flatbreads onto another baking sheet. Top each flatbread with the roasted vegetables, crumbled feta cheese, and chopped parsley.
- Bake in the oven for an additional 10-12 minutes or until the edges are golden brown.
- Remove from the oven, allow to cool slightly, and serve warm.
