  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Lemon - 1, cut into wedges (for serving)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, combine the bell peppers, zucchini, red onion, and cherry tomatoes.
  3. In a small bowl, whisk together the olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper.
  4. Pour the marinade over the vegetables and toss until evenly coated.
  5. Thread the marinated vegetables onto skewers, alternating the types for a colorful presentation.
