Steps
- Preheat your oven to 200°C (400°F).
- In a large bowl, combine the bell peppers, zucchini, red onion, and cherry tomatoes.
- In a small bowl, whisk together the olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper.
- Pour the marinade over the vegetables and toss until evenly coated.
