- Zucchini - 100 grams
- Red bell pepper - 100 grams
- Eggplant - 100 grams
- Carrot - 100 grams
- Chickpeas (canned, drained) - 100 grams
- Garlic - 2 cloves
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley (chopped) - 2 tablespoons
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Pita bread - 2 pieces
Steps
- Preheat the oven to 200°C (400°F).
- Chop the zucchini, red bell pepper, eggplant, and carrot into small cubes.
- In a mixing bowl, combine the chopped vegetables, drained chickpeas, minced garlic, cumin, coriander, olive oil, salt, and black pepper. Toss until well coated.
- Spread the vegetable mixture onto a baking tray lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized.
- Once roasted, remove from the oven and let cool slightly before transferring to a food processor.
- Pulse the roasted vegetables until they are combined but still slightly chunky. Stir in the chopped parsley.
- In a small bowl, mix tahini and lemon juice to create a sauce.
- To serve, place the vegetable mixture onto the pita bread, drizzle with tahini sauce, and fold the pita in half to enjoy.
