Ingredients

  • Zucchini - 100 grams
  • Red bell pepper - 100 grams
  • Eggplant - 100 grams
  • Carrot - 100 grams
  • Chickpeas (canned, drained) - 100 grams
  • Garlic - 2 cloves
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Pita bread - 2 pieces

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Chop the zucchini, red bell pepper, eggplant, and carrot into small cubes.
  3. In a mixing bowl, combine the chopped vegetables, drained chickpeas, minced garlic, cumin, coriander, olive oil, salt, and black pepper. Toss until well coated.
  4. Spread the vegetable mixture onto a baking tray lined with parchment paper.
  5. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized.
  6. Once roasted, remove from the oven and let cool slightly before transferring to a food processor.
  7. Pulse the roasted vegetables until they are combined but still slightly chunky. Stir in the chopped parsley.
  8. In a small bowl, mix tahini and lemon juice to create a sauce.
  9. To serve, place the vegetable mixture onto the pita bread, drizzle with tahini sauce, and fold the pita in half to enjoy.
