Ingredients
- Red bell peppers - 2 large
- Yellow bell pepper - 1 large
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Cut the bell peppers in half lengthwise and remove the seeds and stems.
- In a bowl, mix olive oil, minced garlic, ground cumin, smoked paprika, salt, and black pepper.
- Brush the mixture generously over the cut sides of the bell peppers.
- Place the peppers cut-side down on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20-25 minutes, or until the peppers are tender and slightly charred.
- Remove from the oven and let cool for a few minutes.
- Drizzle with fresh lemon juice and sprinkle with chopped parsley before serving.
