Ingredients

  • Red bell peppers - 2 large
  • Yellow bell pepper - 1 large
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the bell peppers in half lengthwise and remove the seeds and stems.
  3. In a bowl, mix olive oil, minced garlic, ground cumin, smoked paprika, salt, and black pepper.
  4. Brush the mixture generously over the cut sides of the bell peppers.
  5. Place the peppers cut-side down on a baking sheet lined with parchment paper.
  6. Roast in the preheated oven for 20-25 minutes, or until the peppers are tender and slightly charred.
  7. Remove from the oven and let cool for a few minutes.
  8. Drizzle with fresh lemon juice and sprinkle with chopped parsley before serving.
