Ingredients

  • Red bell pepper - 1 large
  • Yellow bell pepper - 1 large
  • Zucchini - 1 medium, diced
  • Chickpeas - 200 grams, cooked and drained
  • Breadcrumbs - 50 grams
  • Cilantro - 30 grams, chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Burger buns - 2
  • Hummus - 4 tablespoons, for serving
  • Lettuce - 2 leaves, for serving
  • Tomato - 1 medium, sliced

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Cut the red and yellow bell peppers in half and remove the seeds. Place them cut side down on a baking sheet and roast in the oven for 20-25 minutes until the skins are blistered.
  3. While the peppers are roasting, heat 1 tablespoon of olive oil in a pan over medium heat. Add the diced zucchini and sauté for about 5 minutes until tender. Add the minced garlic and cook for another minute, then remove from heat.
  4. In a large mixing bowl, combine the cooked chickpeas, sautéed zucchini and garlic, chopped cilantro, breadcrumbs, cumin, paprika, salt, black pepper, and the egg. Mash the mixture until well combined but still slightly chunky.
  5. Once the roasted peppers have cooled slightly, peel off the skins and chop the peppers into small pieces. Fold the roasted peppers into the chickpea mixture.
  6. Form the mixture into two patties.
  7. In the same pan, add another tablespoon of olive oil and heat over medium heat. Cook the patties for about 5-6 minutes on each side until golden brown.
  8. Toast the burger buns lightly on the pan or in the oven.
  9. Assemble the burgers by spreading hummus on the bottom half of the bun, adding a lettuce leaf, the roasted pepper burger patty, and a slice of tomato. Top with the other half of the bun and serve.
