Ingredients

  • Lamb shoulder - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Ground allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix the olive oil, minced garlic, cumin, coriander, paprika, cinnamon, allspice, salt, black pepper, and lemon juice to create a marinade.
  3. Cut the lamb shoulder into chunks and place them in a dish. Pour the marinade over the lamb, ensuring all pieces are well coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
  4. Transfer the marinated lamb to a roasting pan and arrange it in a single layer.
  5. Roast in the preheated oven for about 1 hour, or until the lamb is tender and has a nice golden-brown crust, basting occasionally with the pan juices.
  6. Remove the lamb from the oven and let it rest for 10 minutes. Garnish with chopped parsley before serving.
