Ingredients

  • Garlic - 1 bulb
  • Tahini - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Water - 2 tablespoons
  • Ground cumin - 1/4 teaspoon
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the top off the garlic bulb to expose the cloves and drizzle with 1 tablespoon of olive oil.
  3. Wrap the garlic bulb in aluminum foil and place it in the oven. Roast for 30-35 minutes until the cloves are soft and caramelized.
  4. Once roasted, allow the garlic to cool slightly, then squeeze the cloves out into a mixing bowl.
  5. Add tahini, lemon juice, the remaining tablespoon of olive oil, salt, ground cumin, and water to the bowl with the roasted garlic.
  6. Using a fork or a hand blender, mix until smooth and creamy.
  7. Transfer the dip to a serving bowl and garnish with chopped parsley.
  8. Serve with pita bread or fresh vegetable sticks.
