Ingredients
- Garlic - 1 bulb
- Tahini - 2 tablespoons
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Water - 2 tablespoons
- Ground cumin - 1/4 teaspoon
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- Slice the top off the garlic bulb to expose the cloves and drizzle with 1 tablespoon of olive oil.
- Wrap the garlic bulb in aluminum foil and place it in the oven. Roast for 30-35 minutes until the cloves are soft and caramelized.
- Once roasted, allow the garlic to cool slightly, then squeeze the cloves out into a mixing bowl.
- Add tahini, lemon juice, the remaining tablespoon of olive oil, salt, ground cumin, and water to the bowl with the roasted garlic.
- Using a fork or a hand blender, mix until smooth and creamy.
- Transfer the dip to a serving bowl and garnish with chopped parsley.
- Serve with pita bread or fresh vegetable sticks.
