Ingredients

  • Canned chickpeas - 400 grams
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 1 tablespoon, chopped (for garnish)
  • Lemon zest - 1 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Drain and rinse the canned chickpeas under cold water, then pat them dry with a clean kitchen towel.
  3. In a large bowl, combine the chickpeas, olive oil, cumin, paprika, garlic powder, salt, and black pepper. Toss until the chickpeas are well coated.
  4. Spread the chickpeas in a single layer on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until they are golden brown and crunchy.
  6. Remove from the oven and let them cool slightly. Sprinkle with lemon zest and chopped parsley before serving.
