- Chestnuts - 300 grams

- Sea salt - 1 teaspoon
- Fresh thyme - 1 teaspoon (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Rinse the chestnuts under cold water and dry them thoroughly.
- Using a sharp knife, make a shallow 'X' cut on the flat side of each chestnut to prevent them from bursting during roasting.
- Place the chestnuts in a bowl and drizzle with olive oil, tossing to coat evenly.
- Spread the chestnuts in a single layer on a baking sheet and sprinkle with sea salt and fresh thyme if using.
- Roast in the preheated oven for 20-25 minutes, shaking the baking sheet halfway through to ensure even cooking.
- Remove from the oven when the shells are cracked and the nuts are tender. Allow to cool slightly before peeling.
