Ingredients

  • Chestnuts - 300 grams
  • Olive oil - 1 tablespoon
  • Sea salt - 1 teaspoon
  • Fresh thyme - 1 teaspoon (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Rinse the chestnuts under cold water and dry them thoroughly.
  3. Using a sharp knife, make a shallow 'X' cut on the flat side of each chestnut to prevent them from bursting during roasting.
  4. Place the chestnuts in a bowl and drizzle with olive oil, tossing to coat evenly.
  5. Spread the chestnuts in a single layer on a baking sheet and sprinkle with sea salt and fresh thyme if using.
  6. Roast in the preheated oven for 20-25 minutes, shaking the baking sheet halfway through to ensure even cooking.
  7. Remove from the oven when the shells are cracked and the nuts are tender. Allow to cool slightly before peeling.
  8. Serve warm and enjoy the roasted chestnuts immediately.
