Ingredients
- Cauliflower - 300 grams, cut into florets
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Ground cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpea flour - 50 grams
- Fresh parsley - 2 tablespoons, finely chopped
- Lemon juice - 1 tablespoon
- Tahini - 2 tablespoons
- Water - 2 tablespoons
- Pita bread - 2 pieces
- Cucumber - 1 small, sliced
- Tomato - 1 small, sliced
- Red onion - 1/4 small, thinly sliced
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, toss the cauliflower florets with olive oil, garlic powder, cumin, smoked paprika, salt, and black pepper until well coated.
- Spread the seasoned cauliflower on a baking sheet and roast in the preheated oven for 25-30 minutes, or until tender and golden brown, stirring halfway through.
- Once roasted, let the cauliflower cool slightly, then transfer it to a mixing bowl.
- Add chickpea flour, chopped parsley, and lemon juice to the bowl with the roasted cauliflower and mash everything together until well combined.
- Form the mixture into two burger patties.
- Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for about 4-5 minutes on each side, until golden and crispy.
- While the patties are cooking, prepare the tahini sauce by mixing tahini and water in a small bowl until smooth. Adjust consistency with more water if needed.
- To assemble, place each cauliflower patty in a pita bread, topped with cucumber, tomato, and red onion, and drizzle with tahini sauce.
