Ingredients

  • Cauliflower - 300 grams, cut into florets
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpea flour - 50 grams
  • Fresh parsley - 2 tablespoons, finely chopped
  • Lemon juice - 1 tablespoon
  • Tahini - 2 tablespoons
  • Water - 2 tablespoons
  • Pita bread - 2 pieces
  • Cucumber - 1 small, sliced
  • Tomato - 1 small, sliced
  • Red onion - 1/4 small, thinly sliced

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, toss the cauliflower florets with olive oil, garlic powder, cumin, smoked paprika, salt, and black pepper until well coated.
  3. Spread the seasoned cauliflower on a baking sheet and roast in the preheated oven for 25-30 minutes, or until tender and golden brown, stirring halfway through.
  4. Once roasted, let the cauliflower cool slightly, then transfer it to a mixing bowl.
  5. Add chickpea flour, chopped parsley, and lemon juice to the bowl with the roasted cauliflower and mash everything together until well combined.
  6. Form the mixture into two burger patties.
  7. Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for about 4-5 minutes on each side, until golden and crispy.
  8. While the patties are cooking, prepare the tahini sauce by mixing tahini and water in a small bowl until smooth. Adjust consistency with more water if needed.
  9. To assemble, place each cauliflower patty in a pita bread, topped with cucumber, tomato, and red onion, and drizzle with tahini sauce.
